Abu Dhabi has long been a crossroads for travellers, but with the production of oil in the 1960s, the influx of expatriates from around the world increased. Today, there are over 200 nationalities living in the United Arab Emirates, many of whom are global nomads. These global nomads, who previously lived in other cities and absorbed elements of the cuisine, bring their culinary influences to Abu Dhabi, where they have merged with the local ingredients and foodways. At the same time, Emiratis also travel with greater frequency, and their native food has become imbued with flavours and spices from around the globe. The result is a glorious fusion of tastes and aromas.
